Caprese Grilled Cheese sandwich

Today I’m going to share a recipe that is very simple. It’s also a tasty recipe! In the summer, when the tomatoes are in their prime, I read blog posts praising the classic caprese.

With their beautifully sliced tomatoes, white mozzarella and green basil leaves, they always look stunning. It’s just gorgeous!

Do you know something? I’ve never eaten a Caprese that was not, to be honest…a bit bland. Really.

So I decided to combine these classic ingredients into a warm, melty, grilled cheese. This Caprese Grilled Cheese Sandwich will not be bland at all.

Pesto is what really adds flavor and a boost to the dish. Who doesn’t love melty cheese?

Let me tell you a secret: I bake my “grilled” sandwiches. It was actually out of frustration that I began doing this.

The smoke alarm would always go off when I cooked them on the stovetop. I hate that thing! You can bake as many as you like at one time and the smoke alarm will not taunt you!

How to Make a Caprese Grilled Cheese Sandwich

Pre-heat the oven to 375°.

Spread half of the pesto on each slice of bread. Add half of the shredded cheese and tomatoes. Sprinkle with salt and Pepper. Add the remaining mozzarella. Spread remaining pesto on remaining bread slices. Place on top.

Spread the butter liberally on one side of the sandwich and sprinkle with Italian dried herbs. Place the buttered side of the sandwich on a baking tray. Repeat the buttering and seasoning process on the other side.

Turn the pan halfway through baking and bake for 10-12 mins or until golden brown.
